Hi, I’m Nikita Botberg — friends call me Niki. I’ve been cooking since I was 17, and from the very beginning, it felt like home. Over the years, I’ve worked across several European countries, growing from line cook to executive chef and training in a variety of restaurants, including Michelin-recognized kitchens.
My foundation is modern French cuisine — it taught me respect for ingredients, balance, and technique. Along the way, I added Italian craftsmanship, Scandinavian simplicity, and the bold energy of Pan-Asian flavors. Fermentation plays an important role in my work, helping me build depth, umami, and character in every dish.
Today, my style blends French structure with Asian accents, living flavors, and thoughtful simplicity. No unnecessary complexity — just clean flavors, strong technique, and attention to detail. My goal is simple: to bring people together through food and help create moments worth remembering.
